TORONTO – Montreal chef Costas Spiliadis is launching a Dubai outpost of his acclaimed seafood restaurant, Estiatorio Milos, in the Royal Atlantis Resort and Residences, set to open later this year.

“The Middle East, specifically Dubai, has been on our radar for some time,” said Spiliadis. “Dubai has become a premier culinary and hospitality destination, with the world’s most talented chefs and well-regarded brands represented.”

With a design patterned on a sophisticated Athens dining room — 19-foot high ceilings and Greek marble floors — Milos will feature a design in which the structure appears to ‘float’, and is fully transparent.

In addition to 220 indoor seats, three private dining rooms will be available, one of which will be a rooftop as well as a terrace.

Focusing on freshly caught seafood, Milos encourages family-style sharing. Rounding out the food offering is a raw bar highlighting seafood specialties. Guests will choose from a 300-bottle wine list comprised mostly of Greek and Mediterranean labels.

Launched in Montreal in 1979, Milos now operates in New York, Athens, Las Vegas, Miami and London.

The new phase of the Atlantis resort site, The Royal Atlantis Resort & Residences will comprise two properties, a 2.3 km stretch of private beach, 2,343 rooms, 40 restaurants and bars and one leading international beach and nightclub. Totaling 43 stories, The Royal Atlantis will also house 231 luxury apartments, 795 luxury hotel rooms, over 90 swimming pools and a rooftop ‘Skypool’ pool, suspended 295 feet above The Palm.
